These Peach Pistachio Frangipane Tarts are a delightful treat, combining the rich, nutty flavor of pistachios with the sweetness of ripe peaches. The puff pastry provides a flaky base, while the frangipane filling adds a deliciously smooth texture, perfect for a sweet dessert or afternoon snack.

- 1 sheet puff pastry, thawed
- 1/2 cup pistachios, finely chopped
- 1/4 cup sugar
- 1/4 cup unsalted butter, softened
- 1 egg
- 2 ripe peaches, thinly sliced
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry and cut into 4 equal squares. Place the squares on the prepared baking sheet.
- In a bowl, mix together the pistachios, sugar, butter, and egg to make the frangipane filling.
- Spread the frangipane filling evenly over each puff pastry square.
- Arrange the peach slices on top of the frangipane filling.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
- Remove from the oven and let cool. Dust with powdered sugar before serving.
Notes
- If you prefer, you can use other fruits such as plums or apricots in place of the peaches.
- Make sure to let the tarts cool for a few minutes before dusting with powdered sugar.
- You can prepare the frangipane filling in advance and store it in the fridge for a couple of days.
