Scale
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup brownie mix (dry, not prepared)
- 2 tablespoons water
- 1/4 cup mini chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough in half. To one half, add the dry brownie mix and water, stirring until combined.
- Gently fold the two doughs together to create a marbled effect. Be careful not to overmix.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. If desired, press a few mini chocolate chips onto the tops of each cookie.
- Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
