This vibrant and flavorful appetizer features creamy burrata cheese surrounded by a fresh pesto base and topped with juicy roasted tomatoes. Finished with a balsamic glaze drizzle and fresh basil, this dish is the perfect start to any meal.

  • 1 pint cherry or grape tomatoes, halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 ball fresh burrata cheese (about 8 ounces)
  • 1/4 cup pesto (store-bought or homemade)
  • Fresh basil leaves, for garnish
  • Balsamic glaze, for drizzling
  • Crusty bread, crostini, or crackers for serving

Instructions

  • Roast the tomatoes: Preheat your oven to 400°F (200°C). Place the halved tomatoes on a baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, and Italian seasoning. Toss to coat. Roast in the preheated oven for 15-20 minutes, or until the tomatoes are soft, juicy, and slightly caramelized.
  • Prepare the burrata and pesto: Place the burrata in the center of a serving plate or shallow dish. Spoon the pesto evenly around the burrata, creating a vibrant green base.
  • Assemble the appetizer: Top the burrata with the roasted tomatoes, allowing the juices to drip onto the pesto for added flavor. Drizzle with balsamic glaze for a touch of sweetness.
  • Garnish and serve: Scatter fresh basil leaves over the top for a pop of color. Serve immediately with crusty bread, crostini, or crackers for dipping.

Notes

  • Roasted tomatoes can be prepared a day ahead of time. Store them in the refrigerator and reheat slightly before serving.
  • For extra richness, drizzle some olive oil over the burrata before serving.
  • If you don’t have pesto on hand, you can substitute with a drizzle of olive oil and a sprinkle of Parmesan cheese.
