This Pickled Bologna is a tangy and flavorful addition to any party platter. Infused with garlic, mustard seeds, and a hint of spice, it’s a delicious and unique snack that’s sure to impress your guests. The longer it pickles, the more robust the flavors become, making it perfect for sandwiches, salads, or enjoying on its own!


Ingredients

  • 1 lb bologna, sliced into 1/4-inch thick rounds (for pickling)
  • 2 cups white vinegar (for tanginess)
  • 1 cup water (for balance)
  • 1/2 cup granulated sugar (for sweetness)
  • 1 tablespoon pickling salt (for preservation)
  • 1 tablespoon mustard seeds (for spice)
  • 1 teaspoon black peppercorns (for heat)
  • 1 teaspoon red pepper flakes (optional, for extra kick)
  • 4 cloves garlic, peeled and smashed (for flavor)
  • 1 small onion, thinly sliced (for additional flavor)
  • 1 bay leaf (for depth)

Instructions

1️⃣ Prepare the Pickling Liquid:
In a medium saucepan, combine the vinegar, water, sugar, and pickling salt. Bring to a boil, stirring until the sugar and salt are dissolved. Remove from heat and let cool to room temperature.

2️⃣ Layer the Ingredients:
In a clean, sterilized jar, layer the bologna slices, garlic, onion, and bay leaf.

3️⃣ Add Spices:
Add mustard seeds, black peppercorns, and red pepper flakes (if using) to the jar.

4️⃣ Add Pickling Liquid:
Pour the cooled pickling liquid over the bologna, ensuring all slices are submerged.

5️⃣ Seal and Refrigerate:
Seal the jar with a lid and refrigerate. Allow the bologna to pickle for at least 3 days for the best flavor, though it can be enjoyed sooner.

Notes

 

Pickled bologna makes a great addition to sandwiches, salads, or as a standalone snack. The longer it sits, the more intense the flavor. Store in the refrigerator for up to 2 weeks.
