Ingredients
For the Chicken and Sauce:

1 pound boneless, skinless chicken breasts, thinly sliced

1 tablespoon olive oil

1/2 onion, chopped

1 can (15 oz) pineapple chunks, drained

1/4 cup soy sauce

1/4 cup honey

1/4 cup rice vinegar

1 clove garlic, minced

1/4 teaspoon red pepper flakes (optional)
For Serving:

2 cups cooked rice
Instructions

In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned. Remove and set aside.

In the same skillet, sauté chopped onion until softened.

Add pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using). Stir to combine.

Return the cooked chicken to the skillet and toss everything together to coat.

Let it simmer for a few minutes until the sauce slightly thickens.
