For the Chicken and Sauce:

  • 1 pound boneless, skinless chicken breasts, thinly sliced

  • 1 tablespoon olive oil

  • 1/2 onion, chopped

  • 1 can (15 oz) pineapple chunks, drained

  • 1/4 cup soy sauce

  • 1/4 cup honey

  • 1/4 cup rice vinegar

  • 1 clove garlic, minced

  • 1/4 teaspoon red pepper flakes (optional)

For Serving:

  • 2 cups cooked rice


Instructions

  • In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned. Remove and set aside.

  • In the same skillet, sauté chopped onion until softened.

  • Add pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using). Stir to combine.

  • Return the cooked chicken to the skillet and toss everything together to coat.

  • Let it simmer for a few minutes until the sauce slightly thickens.

  • Serve hot over cooked rice.

Notes

  • Adjust red pepper flakes to your heat preference.

  • Great served with steamed broccoli or a fresh salad.

  • Use fresh pineapple if preferred.
