Description

Pineapple Cowboy Candy is a unique and flavorful condiment that combines the sweetness of fresh pineapple with the heat of jalapeño peppers. This tangy, spicy relish makes a fantastic gift and is perfect for adding a kick to your meals.


Ingredients

  • 3 cups of diced fresh pineapple
  • 1 cup of thinly sliced jalapeño peppers
  • 1 cup of apple cider vinegar
  • 2 cups of granulated sugar
  • 2 tablespoons of lemon juice
  • 1 teaspoon of mustard seeds
  • 1/2 teaspoon of turmeric powder
  • 1 tablespoon of grated ginger
  • 2 cloves of finely chopped garlic

Instructions

  • Prepare the Syrup: In a large saucepan, combine apple cider vinegar, granulated sugar, lemon juice, mustard seeds, turmeric powder, grated ginger, and chopped garlic. Bring to a boil, then reduce heat and simmer until the sugar is completely dissolved.
  • Add Pineapple and Jalapeños: Stir in the diced pineapple and sliced jalapeños. Continue to simmer over medium heat until the pineapple is tender and the liquid has thickened to a syrupy consistency, about 20 minutes.
  • Sterilize Jars: While the pineapple mixture cooks, sterilize your jars and lids by submerging them in boiling water for at least 5 minutes.
  • Fill Jars: Spoon the hot pineapple mixture into the sterilized jars, leaving a bit of space at the top. Wipe the rims clean, seal with lids, and process in a hot water bath for about 10 minutes.
  • Cool and Check Seals: After processing, let the jars cool completely. Ensure the seals are tight before storing them in a cool, dark place.

  • For a spicier kick, add extra jalapeño slices.
