Looking for a unique summer treat that’s both spicy and sweet? Try this homemade summer sausage with a kick, combining juicy pineapple and fiery jalapeños for a deliciously bold flavor!


Ingredients

  • 2 pounds ground beef (or a blend of beef and pork)
  • 1/2 cup finely chopped fresh pineapple
  • 23 jalapeño peppers, seeded and finely chopped (adjust for heat preference)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes (optional, for extra heat)
  • 1/4 cup cold water
  • Sausage casings (optional, for traditional sausage shape)

Instructions

  • Prepare the Ingredients:
    • If using sausage casings, soak them in water according to package instructions.
  • Mix the Sausage Blend:
    • In a large bowl, combine the ground beef with finely chopped pineapple and jalapeños.
    • Add the soy sauce, brown sugar, garlic powder, onion powder, paprika, dried oregano, black pepper, salt, and crushed red pepper flakes (if using). Mix thoroughly until all ingredients are well combined.
  • Add the Water:
    • Gradually add the cold water to the meat mixture, mixing until the mixture becomes sticky and slightly elastic.
  • Stuff the Sausage Casings (Optional):
    • If using casings, rinse them under cold water and stuff them with the sausage mixture using a sausage stuffer. Twist into 6-8 inch links and tie off the ends.
  • Cook the Sausage:
    • Preheat your oven to 350°F (175°C).
    • If using casings, place the sausages on a baking rack set over a baking sheet. Bake for 45-60 minutes, or until the sausages reach an internal temperature of 160°F (71°C). For a firmer texture, you can also smoke the sausages if you have a smoker.
  • Slice and Serve:
    • Allow the sausages to cool slightly before slicing. Serve as a tasty appetizer or part of a main dish.

Notes

For a more intense flavor, let the sausage mixture marinate in the refrigerator for a few hours before cooking. Adjust the amount of jalapeño for your desired spice level.
