- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 1 cup shelled pistachios, chopped
- Green food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, combine cream cheese and 1 cup sugar. Mix until smooth. Beat in eggs one at a time. Stir in vanilla extract and chopped pistachios. Add green food coloring if desired.
- Pour cream cheese mixture over crust in springform pan.
- Bake in preheated oven for 60 minutes, or until center is set.
- Allow to cool completely before removing from pan. Chill in the refrigerator before serving.
Notes
- For a more intense pistachio flavor, you can add pistachio paste or extra chopped pistachios to the batter.
- Green food coloring is optional and is only for enhancing the visual appeal.
