- 1 cup (2 sticks) unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg yolk
- 2 cups all-purpose flour
- ½ cup finely ground pistachios
- ¼ tsp salt
- 1 cup cherry preserves
Instructions
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg yolk.
- Gradually mix in the flour, ground pistachios, and salt until well combined.
- Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
- Roll out one disc of dough on a lightly floured surface to about 1/8-inch thickness.
- Use a cookie cutter to cut out an even number of rounds.
- Use a smaller cookie cutter to cut out the centers of half of the rounds.
- Place the whole rounds on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool completely.
- Spread cherry preserves on the bottom of each whole cookie and sandwich with a cut-out cookie on top.
- Dust with powdered sugar before serving.
Notes
- To get a nice nutty flavor, ensure your pistachios are finely ground, but not powdered.
- You can substitute cherry preserves with raspberry or strawberry preserves for a different twist.
- For a crispier texture, bake the cookies a little longer, but watch carefully to avoid over-baking.
