Description

These Pistachio Crunch Muffins are a delightful treat, blending the nutty flavor of pistachios with a moist, fluffy texture. Topped with a crunchy pistachio crumble, they make for a perfect breakfast or snack!

For the Muffins:

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 box (3.4 oz) instant pistachio pudding mix
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • 1/2 cup chopped pistachios (optional for added crunch)

For the Crunch Topping:

  • 1/4 cup chopped pistachios
  • 1/4 cup brown sugar
  • 2 tbsp all-purpose flour
  • 2 tbsp cold butter, cubed

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  • Prepare the Muffin Batter:
    • In a large mixing bowl, whisk together the flour, sugar, pistachio pudding mix, salt, and baking powder.
    • In another bowl, whisk together the melted butter, eggs, milk, Greek yogurt or sour cream, and vanilla extract until smooth.
    • Pour the wet ingredients into the dry ingredients and stir until just combined; avoid overmixing. Fold in the chopped pistachios if using.
  • Make the Crunch Topping:
    • In a small bowl, combine the chopped pistachios, brown sugar, and flour.
    • Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs.
  • Assemble the Muffins:
    • Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full.
    • Sprinkle the pistachio crunch topping evenly over each muffin.
  • Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool and Serve: Allow the muffins to cool in the pan for a few minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature!

  • Store muffins in an airtight container for up to 3 days at room temperature or refrigerate for longer freshness.
