For the Muffins:
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 box (3.4 oz) instant pistachio pudding mix
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1/2 cup Greek yogurt or sour cream
- 1 tsp vanilla extract
- 1/2 cup chopped pistachios (optional for added crunch)
For the Crunch Topping:
- 1/4 cup chopped pistachios
- 1/4 cup brown sugar
- 2 tbsp all-purpose flour
- 2 tbsp cold butter, cubed
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
- Prepare the Muffin Batter:
- In a large mixing bowl, whisk together the flour, sugar, pistachio pudding mix, salt, and baking powder.
- In another bowl, whisk together the melted butter, eggs, milk, Greek yogurt or sour cream, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined; avoid overmixing. Fold in the chopped pistachios if using.
- Make the Crunch Topping:
- In a small bowl, combine the chopped pistachios, brown sugar, and flour.
- Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs.
- Assemble the Muffins:
- Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full.
- Sprinkle the pistachio crunch topping evenly over each muffin.
- Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Serve: Allow the muffins to cool in the pan for a few minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature!
