- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/2 teaspoon almond extract
- 1/2 cup shelled pistachios, chopped
Instructions
- In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves, stirring occasionally.
- Remove from heat and stir in the almond extract. Let the mixture cool to room temperature.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Add the chopped pistachios during the last few minutes of churning.
- Transfer the gelato to a container and freeze for at least 2 hours before serving.
Notes
- You can use roasted pistachios for a deeper flavor.
- If you don’t have an ice cream maker, you can freeze the mixture in a container, stirring every 30 minutes for 2-3 hours to break up any ice crystals.
