This “Poor Man’s Prime Rib” recipe transforms a humble beef eye of round roast into a deliciously tender and flavorful main dish that’s surprisingly easy to prepare. With simple seasonings and a unique roasting technique, this recipe is perfect for a budget-friendly alternative to classic prime rib, ideal for special dinners or holiday gatherings.

  • 3-pound beef eye of round roast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  • Preheat and Season: Preheat the oven to 500°F (260°C). Season the roast generously with salt, pepper, garlic powder, and onion powder, making sure to coat all sides evenly. Place the roast in a roasting pan or baking dish without covering or adding water.
  • Start Roasting: Place the roast in the preheated oven. Reduce the temperature to 475°F (245°C). Roast for 21 minutes (7 minutes per pound).
  • Turn Off the Oven: After the initial roast time, turn off the oven completely and leave the roast inside for 2 1/2 hours. Do not open the oven door during this time, as the residual heat will continue to cook the meat slowly and evenly.
  • Check and Serve: After 2 1/2 hours, remove the roast from the oven. The internal temperature should be at least 145°F (65°C) for a medium-rare result. Carve the roast into thin slices and serve.
