Description

  • For the Bars:
    • 4 large eggs
    • 1 2/3 cups granulated sugar
    • 1 cup vegetable oil
    • 1 (15 oz) can pumpkin puree
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 2 teaspoons ground cinnamon
    • 1 teaspoon salt
    • 1 teaspoon baking soda
  • For the Frosting:
    • 1 (8 oz) package cream cheese, softened
    • 1/2 cup butter, softened
    • 2 cups powdered sugar
    • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 15x10x1-inch pan or line it with parchment paper for easy removal.
  • Prepare the Batter:
    • In a large mixing bowl, beat the eggs, sugar, oil, and pumpkin until well blended.
    • In a separate bowl, whisk together the flour, baking powder, cinnamon, salt, and baking soda. Gradually add the dry ingredients to the pumpkin mixture, stirring just until combined.
    • Spread the batter evenly into the prepared pan.
  • Bake:
    • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Allow the bars to cool completely in the pan on a wire rack.
  • Prepare the Frosting:
    • In a medium bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, beating until the frosting is creamy and smooth.
  • Frost and Serve:
    • Once the bars are completely cool, spread the cream cheese frosting evenly over the top. Cut into bars and serve.
