Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 3 large eggs
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 cup caramel sauce (plus more for drizzling)

Instructions

  • Preheat the oven to 325°F (160°C). Combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  • Beat cream cheese, sugar, and brown sugar until smooth. Add pumpkin puree, eggs, pumpkin pie spice, and vanilla, mixing until combined.
  • Pour half the batter over the crust, drizzle with caramel sauce, then top with the remaining cheesecake batter.
  • Bake for 55-60 minutes, until the center is set. Allow it to cool, then refrigerate for at least 4 hours.
  • Drizzle with extra caramel sauce before serving.

Notes

For added flavor, consider topping with whipped cream or pecans.
