Description

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Crumb Topping:

  • ¾ cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter, cold and cubed

For the Glaze (optional):

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan or line with parchment paper.
  • Prepare the Cake Batter: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. In another bowl, mix the pumpkin puree, vegetable oil, eggs, and vanilla extract. Combine the wet and dry ingredients, mixing until just blended.
  • Make the Crumb Topping: In a medium bowl, combine the flour, granulated sugar, brown sugar, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Assemble and Bake: Pour the cake batter into the prepared pan and spread evenly. Sprinkle the crumb topping evenly over the cake batter. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Add Glaze (Optional): If desired, mix powdered sugar and milk to make a simple glaze. Drizzle over the cooled cake before serving.
  • Cool and Serve: Allow the cake to cool in the pan on a wire rack before cutting into squares.

Notes

  • For extra flavor, you can add chopped nuts or chocolate chips to the batter.
