Description

Delightfully soft and flavorful, these Pumpkin Sugar Cookies are perfect for fall! Topped with a sweet icing, they make a festive treat for holidays and gatherings.


Ingredients

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

For the Icing:

  • 1 1/2 cups powdered sugar
  • 2 tbsp milk
  • 1 tbsp unsalted butter, melted
  • 1/2 tsp vanilla extract
  • Food coloring (optional)

Instructions

  • Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Prepare the Cookies:
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Beat in the pumpkin puree, egg, and vanilla extract until well combined.
    • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Shape and Bake:
    • Scoop rounded tablespoons of dough and place them onto the prepared baking sheets. Flatten each cookie slightly with the back of a spoon.
    • Bake for 10-12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Prepare the Icing:
    • In a bowl, whisk together the powdered sugar, milk, melted butter, and vanilla extract until smooth. If desired, add a few drops of food coloring to tint the icing.
    • Once cookies are completely cool, spread a thin layer of icing on top of each cookie.
  • Serve and Enjoy:
    • Enjoy these delicious cookies with a cup of coffee or tea!

Notes

For a festive touch, you can add seasonal sprinkles on top of the icing.
