Ingredients

  • 1 1/2 cups mashed purple sweet potatoes
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup evaporated milk
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 tsp cinnamon
  • 1 pre-made pie crust

Instructions

  • Preheat the oven to 350°F. In a mixing bowl, whisk together the mashed purple sweet potatoes, sugar, brown sugar, evaporated milk, vanilla extract, eggs, and cinnamon until smooth and well combined.
  • Pour the mixture into the pre-made pie crust, smoothing the top as needed.
  • Bake for 45-50 minutes, or until the filling is set and a toothpick inserted in the center comes out clean. Allow to cool before slicing and serving.
