For the Brownies:
- 1 1/2 cups Flour
- 1/2 teaspoon Baking Powder

- 1/4 cup Cocoa Powder
- 4 large Eggs
- 1 1/4 cups Sugar
- 3/4 cup Brown Sugar
- 1/2 cup Oil
- 2 teaspoons to 1 Tablespoon Red Gel Food Coloring
- 2 teaspoons Vanilla Extract
- 8 ounces White Chocolate (at least 30% cocoa butter)
- 1/2 cup Butter
For the Cream Cheese Frosting:
- 1/2 cup Salted Butter (softened)
- 1 (8-ounce) pkg. Cream Cheese (softened)
- 3 1/4 cups Powdered Sugar
- 2 teaspoons Vanilla Extract or Vanilla Bean Paste
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, and cocoa powder. Set aside.
- In a separate bowl, beat the eggs, sugar, and brown sugar together until light and fluffy. Add the oil, red food coloring, and vanilla extract, and mix until well combined.
- Melt the white chocolate and butter together in a microwave-safe bowl, stirring every 20-30 seconds until smooth. Let it cool slightly, then fold into the egg mixture.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownies to cool completely in the pan on a wire rack.
- While the brownies are cooling, make the cream cheese frosting: Beat the softened butter and cream cheese together until smooth. Gradually add the powdered sugar and vanilla, beating until fluffy and smooth.
- Once the brownies are fully cooled, spread the cream cheese frosting evenly over the top.
- Cut into squares and serve.
