These decadent red velvet cheesecake bites are a sweet treat that combines a creamy cheesecake filling with a rich red velvet flavor, all sitting on a crunchy Oreo crust. Drizzled with melted white chocolate, they make a perfect bite-sized indulgence for any occasion.

  • 1 1/2 cups crushed Oreo cookies
  • 2 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • Red food coloring (to desired shade)
  • 1 cup white chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, combine crushed Oreo cookies and melted butter. Press the mixture into the bottom of a 9×9 inch baking dish to form the crust.
  • In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition.
  • Mix in the sour cream, vanilla extract, cocoa powder, and red food coloring until the mixture is well combined and evenly colored.
  • Pour the cheesecake mixture over the Oreo crust in the baking dish.
  • Bake for 30-35 minutes, or until the cheesecake is set and slightly firm to the touch.
  • Allow the cheesecake to cool, then refrigerate for at least 2 hours to set.
  • Once chilled, cut into bite-sized squares and drizzle with melted white chocolate.

  • Adjust the amount of red food coloring depending on the desired color intensity of the red velvet flavor.
