Description

These decadent Red Velvet Cookie Cups are soft, chewy, and filled with a creamy cream cheese frosting. The perfect balance of tangy and sweet, they are ideal for any occasion, from holidays to special celebrations.

Ingredients

Scale

For the Red Velvet Cookie Cups

  • 1 ½ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon kosher salt
  • 1 teaspoon baking soda
  • ¼ cup butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 egg
  • 1 tablespoon red food coloring
  • ½ teaspoon vanilla extract
  • 1 teaspoon white vinegar

For the Cream Cheese Frosting

  • 16 ounces cream cheese, softened
  • ½ cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour, cocoa powder, salt, and baking soda. Set aside.
  • In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy.
  • Add the egg, red food coloring, vanilla extract, and white vinegar to the butter mixture. Mix until well combined.
  • Gradually add the dry ingredients to the wet mixture and stir until combined.
  • Scoop tablespoon-sized portions of dough and place them into a greased muffin tin. Gently press the centers of each to create a cup shape.
  • Bake in the preheated oven for 8-10 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in the tin.
  • While the cookie cups are cooling, prepare the cream cheese frosting. Beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
  • Once the cookie cups have cooled, pipe or spoon the cream cheese frosting into each cup.
  • Serve and enjoy!
