For the Red Velvet Cookie Cups
- 1 ½ cups all-purpose flour
- ¼ cup unsweetened cocoa powder
- ½ teaspoon kosher salt
- 1 teaspoon baking soda
- ¼ cup butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 egg
- 1 tablespoon red food coloring
- ½ teaspoon vanilla extract
- 1 teaspoon white vinegar
For the Cream Cheese Frosting
- 16 ounces cream cheese, softened
- ½ cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, cocoa powder, salt, and baking soda. Set aside.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy.
- Add the egg, red food coloring, vanilla extract, and white vinegar to the butter mixture. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture and stir until combined.
- Scoop tablespoon-sized portions of dough and place them into a greased muffin tin. Gently press the centers of each to create a cup shape.
- Bake in the preheated oven for 8-10 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in the tin.
- While the cookie cups are cooling, prepare the cream cheese frosting. Beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
- Once the cookie cups have cooled, pipe or spoon the cream cheese frosting into each cup.
- Serve and enjoy!
Notes
- If you don’t have red food coloring, you can use a natural food coloring alternative.
- These can be stored in an airtight container in the refrigerator for up to 3 days.
