- 1/4 cup cocoa powder

- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1 tsp red food coloring
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, beat the softened butter and sugar together until creamy. Add the eggs and vanilla extract, mixing well. Stir in the buttermilk and red food coloring until combined.
- In a separate bowl, mix together the flour, cocoa powder, baking soda, and salt. Gradually combine the dry mixture with the wet mixture, mixing until just combined. Fill each muffin liner halfway with the batter.
- For the cream cheese filling, beat the softened cream cheese and powdered sugar together until smooth. Drop a spoonful of the cream cheese mixture into the center of each muffin.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the muffin comes out clean.
