Description

This Red Velvet Strawberry Cheesecake is a decadent dessert that combines the rich, creamy texture of cheesecake with the vibrant color and flavor of red velvet. Topped with fresh strawberries, this indulgent treat is perfect for special occasions or any time you’re craving something sweet and festive.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/2 cup cocoa powder
  • 1/4 cup red food coloring
  • 1 cup chopped strawberries

Instructions

  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan to form the crust.
  • In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
  • In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  • Add cocoa powder and red food coloring, and mix until everything is evenly combined.
  • Pour half of the cream cheese mixture over the crust. Top with chopped strawberries. Pour the remaining cream cheese mixture over the strawberries.
  • Refrigerate for at least 4 hours or overnight before serving to allow the cheesecake to set.

Notes

  • For a more intense red color, add more food coloring as needed.
  • You can top the cheesecake with additional whipped cream or fresh strawberries before serving for extra flavor and decoration.
  • This cheesecake can be made a day ahead and refrigerated overnight for best results.
