  • 1/4 cup water or coconut water

White Layer

  • 1 cup Greek yogurt
  • 1 tablespoon honey or agave
  • 1 teaspoon fresh lemon juice

Blue Layer

  • 1 cup fresh blueberries, rinsed
  • 12 tablespoons honey or agave
  • 1 teaspoon fresh lemon juice
  • 1/4 cup water or coconut water

Instructions

  1. Prepare the Red Layer: Rinse and hull the strawberries. Blend them with honey and lemon juice until smooth. Add water or coconut water to thin the puree slightly to ensure a smooth texture and easier freezing.
  2. Mix the White Layer: In a bowl, stir together the Greek yogurt, honey, and lemon juice until well combined. This creates a creamy, tangy white layer that contrasts the fruit layers.
  3. Blend the Blue Layer: Rinse the blueberries and blend them with honey and lemon juice until smooth. Add water or coconut water to thin the mixture to a spoonable consistency, perfect for freezing evenly.
  4. Assemble the Popsicles: Pour the red strawberry layer into popsicle molds and freeze for 30-45 minutes until firm. Carefully add the white yogurt layer on top, then freeze again until set. Finish by adding the blue blueberry layer and freeze until fully solid, usually 4-6 hours or overnight.
  5. Unmold and Enjoy: Briefly run warm water over the molds to loosen the popsicles and gently remove them. Serve immediately or store in the freezer for later.
