Ingredients
Scale
Red Layer
- 1 cup fresh ripe strawberries, rinsed and hulled
- 1–2 tablespoons honey or agave
- 1 teaspoon fresh lemon juice
- 1/4 cup water or coconut water
White Layer
- 1 cup Greek yogurt
- 1 tablespoon honey or agave
- 1 teaspoon fresh lemon juice
Blue Layer
- 1 cup fresh blueberries, rinsed
- 1–2 tablespoons honey or agave
- 1 teaspoon fresh lemon juice
- 1/4 cup water or coconut water
Instructions
- Prepare the Red Layer: Rinse and hull the strawberries. Blend them with honey and lemon juice until smooth. Add water or coconut water to thin the puree slightly to ensure a smooth texture and easier freezing.
- Mix the White Layer: In a bowl, stir together the Greek yogurt, honey, and lemon juice until well combined. This creates a creamy, tangy white layer that contrasts the fruit layers.
- Blend the Blue Layer: Rinse the blueberries and blend them with honey and lemon juice until smooth. Add water or coconut water to thin the mixture to a spoonable consistency, perfect for freezing evenly.
- Assemble the Popsicles: Pour the red strawberry layer into popsicle molds and freeze for 30-45 minutes until firm. Carefully add the white yogurt layer on top, then freeze again until set. Finish by adding the blue blueberry layer and freeze until fully solid, usually 4-6 hours or overnight.
- Unmold and Enjoy: Briefly run warm water over the molds to loosen the popsicles and gently remove them. Serve immediately or store in the freezer for later.
Notes
- Use fresh, ripe fruit for the best sweetness and vibrant colors.
- Freeze each layer thoroughly before adding the next to keep layers distinct.
- Add water or coconut water to thin purees for smooth freezing and to prevent iciness.
- Dip molds in warm water briefly to easily unmold popsicles without damage.
- Stir honey or sweetener thoroughly in each layer to ensure even sweetness.
