Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1 cup Reese’s peanut butter chips
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a separate large bowl, cream together peanut butter, butter, and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in mashed bananas and vanilla extract.
- Gradually mix in dry ingredients until just combined. Fold in peanut butter chips.
- Pour batter into prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow bread to cool in pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For an extra peanut butter flavor, drizzle melted peanut butter over the cooled loaf.
- You can substitute the peanut butter chips with chocolate chips for a chocolate-peanut butter variation.
- If you don’t have a 9×5-inch loaf pan, use an 8×4-inch pan and reduce the baking time slightly.
