Ingredients

  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries

Instructions

  • Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, beat the cream cheese and sugar until smooth. Add the egg, milk, melted butter, and vanilla extract, and mix until well combined.
  • Slowly add the dry ingredients to the wet mixture and stir until just combined. Fold in the blackberries.
  • Spoon the batter into the muffin tin, filling each about 3/4 full. Bake for 20-25 minutes or until a toothpick comes out clean.
  • Let the muffins cool before serving.

Notes

For added texture, consider sprinkling some oats or granola on top before baking.
