Ingredients
Crust:

1 cup all-purpose flour

½ cup sugar

½ cup butter, room temperature
Filling:

2 large eggs

1 cup sugar

¼ cup all-purpose flour

¼ tsp salt

2 cups diced rhubarb
Instructions

Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

In a bowl, combine flour and sugar for the crust. Cut in the butter with a pastry blender or fingers until mixture resembles coarse crumbs.

Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden.

While crust bakes, whisk together eggs, sugar, flour, and salt until smooth.

Stir in diced rhubarb.

Pour filling mixture evenly over the pre-baked crust.

Return to oven and bake for 35–40 minutes or until filling is set and lightly browned.
