Description

Delight in the tangy sweetness of fresh rhubarb layered over a buttery crust and baked into irresistible bars. These Rhubarb Dream Bars balance tart and sweet perfectly, making them a refreshing treat for any season.

Crust:

  • 1 cup all-purpose flour

  • ½ cup sugar

  • ½ cup butter, room temperature

Filling:

  • 2 large eggs

  • 1 cup sugar

  • ¼ cup all-purpose flour

  • ¼ tsp salt

  • 2 cups diced rhubarb


Instructions

  • Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

  • In a bowl, combine flour and sugar for the crust. Cut in the butter with a pastry blender or fingers until mixture resembles coarse crumbs.

  • Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden.

  • While crust bakes, whisk together eggs, sugar, flour, and salt until smooth.

  • Stir in diced rhubarb.

  • Pour filling mixture evenly over the pre-baked crust.

  • Return to oven and bake for 35–40 minutes or until filling is set and lightly browned.

  • Cool completely before cutting into bars.

Notes

  • Fresh rhubarb is best; if using frozen, thaw and drain excess moisture.

  • Serve bars chilled or at room temperature.

  • Dust with powdered sugar for extra presentation flair.
