Description

A delightful homemade liqueur made with the tartness of fresh rhubarb, spicy ginger, and zesty oranges, sweetened with a homemade simple syrup and vodka. This Rhubarb Liqueur is perfect for sipping on its own or using in cocktails!


Ingredients

Scale
  • 2 pounds rhubarb, peeled and chopped into 1-inch pieces

  • 5 inches fresh ginger, cut into 1/4-inch pieces

  • 4 oranges, peel cut into long strips

  • 1.75 liters vodka (use good quality vodka)

Simple Syrup

  • 3 cups white sugar

  • 3 cups water


Instructions

  • In a large glass jar, combine the chopped rhubarb, ginger pieces, and orange peel strips.

  • Pour in the vodka and stir to combine. Seal the jar tightly and place it in a cool, dark place. Let it infuse for about 4 weeks, shaking the jar gently every few days.

  • After 4 weeks, prepare the simple syrup: In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Allow the syrup to cool to room temperature.

  • Strain the rhubarb mixture through a fine mesh strainer or cheesecloth into a clean jar or bottle, discarding the solids.

  • Add the simple syrup to the strained liquid to reach your desired sweetness (you may not need all of the syrup). Stir to combine.

  • Seal the bottle and let the liqueur rest for at least 1 week to allow the flavors to meld.

  • Serve chilled or use in cocktails as desired.

Notes

  • The longer the liqueur infuses, the more complex the flavors will become. You can store it for up to 6 months in a cool, dark place.

  • Adjust the sweetness by adding more or less of the simple syrup, depending on your preference.

  • This liqueur makes a wonderful gift when bottled in decorative jars.
