- 1 lb chicken thighs or drumsticks
- 1 large onion, diced
- 2 carrots, sliced
- 1 bell pepper, diced
- 2 medium tomatoes, chopped (or 1 cup canned diced tomatoes)
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp turmeric (optional)
- 1 cup rice (washed)
- 4 cups chicken broth or water
- Fresh parsley or cilantro for garnish
Instructions
- Sear the chicken: Heat olive oil in a large pot over medium heat. Add chicken pieces and sear until golden on both sides. Remove and set aside.
- Cook the vegetables: In the same pot, sauté onions, garlic, carrots, and bell peppers until softened. Add tomatoes and cook until they break down into a thick sauce.
- Add spices and broth: Stir in salt, pepper, paprika, and turmeric. Return the chicken to the pot and pour in chicken broth or water.
- Cook the rice: Add the rice to the pot and stir. Bring to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
- Serve: Garnish with fresh parsley or cilantro. Serve hot and enjoy!
Notes
- For a richer flavor, use chicken broth instead of water.
- You can also use boneless chicken for quicker cooking.
- Turmeric adds a nice color but is optional.
- This dish can be made in a slow cooker, cooking the chicken and vegetables for 4 hours on low and adding the rice for the last 30 minutes.
