Description

This hearty and comforting chicken stew combines tender chicken, flavorful vegetables, and perfectly cooked rice, making it a perfect dish for any meal. Packed with rich flavors, this stew will warm you up and satisfy your hunger with every bite.


Ingredients

  • 1 lb chicken thighs or drumsticks
  • 1 large onion, diced
  • 2 carrots, sliced
  • 1 bell pepper, diced
  • 2 medium tomatoes, chopped (or 1 cup canned diced tomatoes)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp turmeric (optional)
  • 1 cup rice (washed)
  • 4 cups chicken broth or water
  • Fresh parsley or cilantro for garnish

Instructions

  • Sear the chicken: Heat olive oil in a large pot over medium heat. Add chicken pieces and sear until golden on both sides. Remove and set aside.
  • Cook the vegetables: In the same pot, sauté onions, garlic, carrots, and bell peppers until softened. Add tomatoes and cook until they break down into a thick sauce.
  • Add spices and broth: Stir in salt, pepper, paprika, and turmeric. Return the chicken to the pot and pour in chicken broth or water.
  • Cook the rice: Add the rice to the pot and stir. Bring to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
  • Serve: Garnish with fresh parsley or cilantro. Serve hot and enjoy!

Notes

  • For a richer flavor, use chicken broth instead of water.
  • You can also use boneless chicken for quicker cooking.
  • Turmeric adds a nice color but is optional.
  • This dish can be made in a slow cooker, cooking the chicken and vegetables for 4 hours on low and adding the rice for the last 30 minutes.
