Description

Rich Creamy Beef Stroganoff is a quick and comforting one-pan meal featuring tender strips of beef, sautéed mushrooms, and a luscious sour cream-based sauce. Ready in under 30 minutes, this hearty dish is perfect for busy weeknights and can be customized to suit different tastes and dietary preferences.

Ingredients

Scale

Proteins

  • 1 lb tender beef strips (sirloin or ribeye)

Vegetables & Aromatics

  • 8 oz cremini or white button mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Dairy & Fats

  • 1/2 cup sour cream (full-fat recommended)
  • 2 tbsp butter
  • 1 tbsp olive oil

Liquids & Condiments

  • 1 cup beef broth
  • 1 tsp Dijon mustard

Thickening & Seasoning

  • 1 tbsp all-purpose flour (or gluten-free flour for gluten-free version)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare and Sear the Beef: Slice beef into thin strips. Heat olive oil in a large skillet over medium-high heat. Quickly sear beef strips for 2-3 minutes per side until browned but still tender. Remove beef from skillet and set aside to prevent overcooking.
  2. Sauté the Onions and Mushrooms: In the same skillet, melt butter and add finely chopped onions. Cook until translucent. Add sliced mushrooms and sauté for 5-7 minutes until they release moisture and turn golden brown.
  3. Create the Sauce Base: Add minced garlic to the mushrooms and cook just until fragrant. Sprinkle flour over the mixture, stirring constantly to avoid lumps, and cook for about 1 minute. Gradually pour in beef broth while whisking to create a smooth sauce.
  4. Combine and Simmer: Return seared beef strips to the skillet. Stir in Dijon mustard. Reduce heat to low and gently fold in sour cream until the sauce is creamy and blended. Let simmer for 3-5 minutes until heated through and sauce thickens.
  5. Finish and Garnish: Taste and season with salt and pepper as needed. Sprinkle chopped fresh parsley on top before serving to add freshness and color.

Notes

  • Use room temperature beef to ensure even and quick browning without steaming.
  • Do not overcook the beef; quick searing preserves tenderness and flavor.
  • Full-fat sour cream provides the best creamy texture and richness.
  • Gradually add broth to avoid lumps when thickening the sauce.
  • Let the dish rest off heat for a couple of minutes before serving to allow flavors to meld.
