- 1 lb rigatoni
- 1 lb Italian sausage
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the rigatoni: Cook the rigatoni according to package instructions. Drain and set aside.
- Cook the sausage: In a large skillet, cook the Italian sausage over medium heat until browned. Remove from the skillet and set aside.
- Sauté the vegetables: In the same skillet, sauté the bell peppers, onion, and garlic until softened, about 5 minutes.
- Add the tomatoes and broth: Add the crushed tomatoes and chicken broth to the skillet. Bring to a simmer, allowing the flavors to meld together.
- Combine sausage and pasta: Add the cooked sausage back to the skillet and stir to combine. Then, add the cooked rigatoni and toss to coat in the sauce.
