Ingredients

  • 1 lb rigatoni
  • 1 lb Italian sausage
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Cook the rigatoni: Cook the rigatoni according to package instructions. Drain and set aside.
  • Cook the sausage: In a large skillet, cook the Italian sausage over medium heat until browned. Remove from the skillet and set aside.
  • Sauté the vegetables: In the same skillet, sauté the bell peppers, onion, and garlic until softened, about 5 minutes.
  • Add the tomatoes and broth: Add the crushed tomatoes and chicken broth to the skillet. Bring to a simmer, allowing the flavors to meld together.
  • Combine sausage and pasta: Add the cooked sausage back to the skillet and stir to combine. Then, add the cooked rigatoni and toss to coat in the sauce.
  • Add Parmesan and season: Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  • Serve: Serve hot, garnished with fresh basil for a burst of color and flavor.

  • You can use mild or spicy Italian sausage based on your preference.
