Description

Ritz Cracker Chicken is a comforting and flavorful dish featuring tender chicken breasts coated in a crispy Ritz cracker crust, topped with a creamy, savory sauce. This dish is easy to prepare and perfect for a satisfying family dinner.


Ingredients

For the Chicken:
  • 4 large boneless, skinless chicken breasts, cut in half
  • 2 sleeves Ritz crackers, crushed
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 teaspoon dried parsley
  • ½ cup sour cream
  • 3 cups grated cheddar cheese
  • Fresh parsley for garnish
For the Sauce:
  • 1 can cream of chicken soup
  • ⅛ cup sour cream
  • 2 tablespoons butter
  • 2 tablespoons milk

Instructions

Prep:

  1. Preheat the oven to 375°F (190°C).

Cracker Mixture:

  1. In a shallow dish, mix crushed crackers with salt, pepper, and parsley.
  2. In separate dishes, place sour cream and cheese.

Coat Chicken:

  1. Dip each chicken breast half into sour cream, coating all sides.
  2. Then dip into the cheese, followed by the cracker mixture, ensuring the chicken is well-coated.

Bake:

  1. Place the coated chicken into a greased 9×13 baking dish.
  2. Cover with foil and bake for 50-55 minutes.
  3. Remove foil and bake for an additional 10 minutes, or until the edges are golden brown.

Prepare Sauce:

  1. While the chicken is finishing cooking, place the sauce ingredients (cream of chicken soup, sour cream, butter, and milk) into a small pot.
  2. Cook over medium-high heat, stirring until well combined.

Serve:

  1. Pour the sauce over the baked chicken and garnish with fresh parsley. Enjoy!

  • For a variation, use different cheeses like mozzarella or pepper jack.
  • To ensure the chicken is cooked through, use a meat thermometer to check that the internal temperature reaches 165°F (74°C).
