- 2 sweet potatoes
- 1 cup cooked turkey, shredded
- 1/2 cup cranberry sauce
- 1/4 cup chopped pecans
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and prick them with a fork. Place them on a baking sheet and roast for 45-50 minutes, or until tender.
- Cut the sweet potatoes in half and scoop out some of the flesh to make room for the filling.
- In a bowl, mix together the cooked turkey, cranberry sauce, chopped pecans, and parsley. Season with salt and pepper.
- Divide the turkey mixture evenly among the sweet potato halves.
- Return the stuffed sweet potatoes to the oven and bake for an additional 10 minutes.
- Serve hot and enjoy!
