Description

These Roast Turkey and Cranberry Stuffed Sweet Potatoes are a festive and delicious way to enjoy leftover turkey. The combination of sweet potatoes, savory turkey, and tangy cranberry sauce makes for a comforting and satisfying dish!


Ingredients

  • 2 sweet potatoes
  • 1 cup cooked turkey, shredded
  • 1/2 cup cranberry sauce
  • 1/4 cup chopped pecans
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash the sweet potatoes and prick them with a fork. Place them on a baking sheet and roast for 45-50 minutes, or until tender.
  • Cut the sweet potatoes in half and scoop out some of the flesh to make room for the filling.
  • In a bowl, mix together the cooked turkey, cranberry sauce, chopped pecans, and parsley. Season with salt and pepper.
  • Divide the turkey mixture evenly among the sweet potato halves.
  • Return the stuffed sweet potatoes to the oven and bake for an additional 10 minutes.
  • Serve hot and enjoy!
