Ingredients

  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped

  • 6 cups chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • Sauté Vegetables: In a large pot, heat a splash of olive oil over medium heat. Sauté the onion, carrots, celery, and garlic until softened, about 5-7 minutes.
  • Add Mushrooms: Stir in the sliced mushrooms and cook until they release their juices, about 3-4 minutes.
  • Add Broth: Pour in the chicken broth and bring to a simmer.
  • Incorporate Chicken: Add the shredded rotisserie chicken and thyme to the pot. Let it simmer for 20 minutes to allow the flavors to meld.
  • Season: Taste and season with salt and pepper as needed.
