  • 1 1/2 cups sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 tbsp purple food coloring gel (for best vibrancy)
  • 1 tsp white vinegar
  • Cream cheese frosting (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  • In another bowl, combine the vegetable oil, buttermilk, eggs, vanilla extract, and purple food coloring. Mix until smooth.
  • Gradually mix the dry ingredients into the wet ingredients, stirring until just combined. Then, stir in the vinegar.
  • Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool completely in the pans before frosting with cream cheese frosting. Decorate with extra purple sprinkles or edible glitter for an elegant finish.

Notes

  • For an extra moist cake, you can add a little more buttermilk.
