This decadent Salted Caramel Chocolate Chip Cheesecake is a showstopper dessert combining creamy cheesecake, rich chocolate chips, and a touch of sea salt. The irresistible salted caramel drizzle adds the perfect finishing touch. Whether for a special occasion or just a treat for yourself, this cheesecake will impress everyone!

  • 1 ½ cups crushed chocolate sandwich cookies (like Oreos)
  • ¼ cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup semi-sweet chocolate chips
  • ½ cup caramel sauce (plus extra for drizzle)
  • 1 teaspoon sea salt flakes
  • Extra chocolate chips (for garnish)
  • Whipped cream (optional, for topping)

Instructions

  • Preheat the oven to 325°F (163°C). Grease and line a 9-inch springform pan.
  • In a medium bowl, combine the crushed chocolate sandwich cookies with melted butter and stir until evenly coated. Press the mixture into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then set aside to cool.
  • In a large mixing bowl, beat the softened cream cheese with the granulated sugar and vanilla extract until smooth and creamy.
  • Add the eggs, one at a time, beating well after each addition.
  • Fold in the semi-sweet chocolate chips.
  • Pour the cheesecake batter over the cooled cookie crust and smooth the top with a spatula.
  • Bake for 50-60 minutes, or until the center is set and a toothpick inserted into the center comes out clean.
  • Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  • Before serving, drizzle the cheesecake with caramel sauce, sprinkle with sea salt flakes, and garnish with extra chocolate chips and whipped cream, if desired.

  • For a firmer crust, you can chill the cookie crust before baking the cheesecake.
