Description

Rich, creamy, and indulgent, these Salted Caramel Fudge Truffles are made with buttery caramel, smooth white chocolate, and finished in a coating of dark or milk chocolate. A decadent bite-sized treat perfect for gifting or special occasions.


Ingredients

  • 60 grams (¼ cup) unsalted butter

  • 240 ml (1 cup) sweetened condensed milk

  • 90 grams (½ cup) brown sugar

  • 150 grams (1 cup) white chocolate, broken into pieces

  • ½ teaspoon sea salt

  • 300 grams (2 cups) good quality dark or milk chocolate, for coating

  • Crushed peanuts or hazelnuts, optional (for garnish)


Instructions

  • In a medium saucepan over medium heat, melt the butter.

  • Add the sweetened condensed milk and brown sugar. Stir constantly until the sugar is dissolved and the mixture is smooth.

  • Bring the mixture to a gentle simmer and cook for 5–7 minutes, stirring frequently, until slightly thickened.

  • Remove from heat and stir in the white chocolate and sea salt until fully melted and incorporated.

  • Transfer the mixture to a shallow dish or small tray lined with parchment paper. Let it cool to room temperature, then refrigerate for at least 2 hours, or until firm.

  • Once chilled, scoop and roll the mixture into small truffle-sized balls. Place on a parchment-lined tray and freeze for 15–20 minutes to firm up.

  • While the truffles are chilling, melt the dark or milk chocolate in a microwave or double boiler.

  • Dip each truffle into the melted chocolate using a fork or dipping tool, then place back on the tray.

  • Optionally, sprinkle with crushed peanuts, hazelnuts, or a light pinch of sea salt.

  • Let set at room temperature or refrigerate until chocolate is firm.

Notes

  • Use high-quality chocolate for best flavor and texture.

  • Store truffles in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
