Instructions

Preheat the oven: Preheat your oven to 400°F (200°C).

Prepare the vegetables: In a large bowl, toss the sweet potatoes, red bell pepper, broccoli (if using), and red onion with olive oil, smoked paprika, thyme, salt, and pepper. Spread them evenly on a baking sheet.

Cook the sausage: In a separate pan, heat a little olive oil over medium heat. Cook the sliced sausage until browned, about 5-7 minutes, then set aside.

Roast the veggies: Roast the seasoned veggies in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and the edges are slightly caramelized.

Make the sauce: While the veggies are roasting, combine the honey, soy sauce, garlic, apple cider vinegar, and sesame oil (if using) in a small saucepan over medium heat. Bring to a simmer, stirring occasionally. Once it thickens slightly, remove from heat.
