Sausage Hashbrown Bites are a delicious, bite-sized breakfast treat loaded with savory sausage, crispy hash browns, cheese, and colorful vegetables. These mini muffins are perfect for a quick breakfast, snack, or brunch, and they’re easy to make ahead and freeze for later!

- 1 pound ground pork sausage
- 1 (20 ounce) package frozen shredded hash brown potatoes, thawed
- 1 cup shredded Cheddar cheese
- 1/2 cup Parmesan cheese
- 1/4 cup chopped green onions
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped jalapeno pepper
- 4 large eggs
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Grease mini muffin cups.
- In a skillet over medium heat, cook the sausage until evenly brown. Drain grease.
- In a bowl, mix the cooked sausage, hash browns, Cheddar cheese, Parmesan cheese, green onions, red bell pepper, green bell pepper, and jalapeno pepper.
- In a separate bowl, beat together the eggs and milk. Pour over the sausage mixture. Season with salt and pepper. Spoon by tablespoonfuls into the prepared muffin cups.
- Bake 20 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
Notes
- You can substitute the pork sausage with turkey sausage for a leaner option.
- Feel free to swap the peppers with other vegetables like mushrooms or spinach.
