This hearty and comforting Sausage Tortellini Soup is the perfect dish to warm you up on a chilly day. With savory Italian sausage, tender cheese tortellini, and fresh spinach in a creamy, flavorful broth, this soup is a complete meal in a bowl. Perfectly spiced with fennel, paprika, and Italian seasoning, it’s sure to become a family favorite!

  • 1 teaspoon olive oil
  • 1 small white onion, diced (approximately 1/2 cup)
  • 1 pound sweet Italian sausage
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon fennel seeds
  • 1/4 teaspoon kosher salt, plus more to taste
  • 4 cups chicken broth
  • 2 cups half and half
  • 10 ounces fresh cheese tortellini
  • 23 handfuls fresh baby spinach (about 3 ounces)

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and cook, stirring occasionally, for 3-4 minutes, until softened.
  • Add the Italian sausage to the pot, breaking it up with a wooden spoon as it cooks. Cook until browned and no longer pink, about 5-6 minutes.
  • Add the minced garlic, paprika, Italian seasoning, fennel seeds, and salt. Stir to combine and cook for another 1-2 minutes, until fragrant.
  • Pour in the chicken broth and half and half. Stir well to combine.
  • Bring the soup to a simmer, then reduce the heat and let it cook for 10 minutes to allow the flavors to meld together.
  • Add the fresh cheese tortellini to the soup and cook according to the package directions, about 3-4 minutes.
  • Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  • Taste and adjust seasoning with more salt if needed.
  • Serve hot, and enjoy!

Notes

  • For a lighter version, you can use low-fat half and half or a combination of milk and heavy cream.
  • Feel free to add additional vegetables like carrots or zucchini for extra nutrition.
