- 1 teaspoon olive oil
- 1 small white onion, diced (approximately 1/2 cup)
- 1 pound sweet Italian sausage
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon fennel seeds
- 1/4 teaspoon kosher salt, plus more to taste
- 4 cups chicken broth
- 2 cups half and half
- 10 ounces fresh cheese tortellini
- 2–3 handfuls fresh baby spinach (about 3 ounces)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook, stirring occasionally, for 3-4 minutes, until softened.
- Add the Italian sausage to the pot, breaking it up with a wooden spoon as it cooks. Cook until browned and no longer pink, about 5-6 minutes.
- Add the minced garlic, paprika, Italian seasoning, fennel seeds, and salt. Stir to combine and cook for another 1-2 minutes, until fragrant.
- Pour in the chicken broth and half and half. Stir well to combine.
- Bring the soup to a simmer, then reduce the heat and let it cook for 10 minutes to allow the flavors to meld together.
- Add the fresh cheese tortellini to the soup and cook according to the package directions, about 3-4 minutes.
- Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
- Taste and adjust seasoning with more salt if needed.
