Description

Savory Garlic Butter Steak Bites are tender, juicy chunks of steak seared to perfection and tossed in a rich garlic butter sauce infused with fresh herbs. Ready in under 20 minutes, this quick and easy recipe delivers bold, mouthwatering flavors perfect for a weeknight dinner, appetizer, or protein-packed snack.

Ingredients

Scale

Steak

  • 1 lb sirloin or ribeye steak, trimmed and diced into 1-inch pieces

Garlic Butter Sauce

  • 3 cloves garlic, freshly minced
  • 3 tbsp butter
  • 2 tbsp fresh parsley or thyme, chopped
  • 1 tbsp olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prep the Steak: Cut the steak into bite-sized cubes, approximately 1 inch pieces. Pat dry thoroughly with paper towels to ensure a good sear. Season generously with salt and freshly ground black pepper to enhance the beef’s natural flavor.
  2. Sear the Steak: Heat olive oil in a skillet over medium-high heat until shimmering. Add steak bites in a single layer without overcrowding. Sear untouched for 2-3 minutes to develop a golden-brown crust, then flip and sear the other side for 2 more minutes. Remove steak bites from the pan and set aside.
  3. Make the Garlic Butter Sauce: Reduce heat to medium and add butter to the same skillet. Once melted, stir in minced garlic and cook for about 30 seconds until fragrant but not browned. Add chopped fresh herbs and stir to infuse the butter with aromatic flavors.
  4. Combine and Finish: Return the steak bites to the skillet and toss them in the garlic butter sauce to coat evenly. Cook together for another minute to allow the steak to absorb the buttery garlic flavors before removing from heat.

Notes

  • Use room temperature steak for even cooking by letting it sit out for 20 minutes before cooking.
  • Don’t overcrowd the pan; cook in batches if necessary to achieve the best sear.
  • Pat steak dry to prevent steaming and promote browning.
  • Use fresh minced garlic for the best flavor rather than garlic powder or pre-minced garlic.
  • Let steak bites rest briefly after cooking to lock in juices and improve tenderness.
