Ingredients

  • 2 filet mignon steaks
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup finely chopped shallots
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 2 tablespoons green peppercorns

Instructions

  • Season the filet mignon steaks generously with salt and pepper.
  • Heat olive oil in a skillet over high heat.
  • Sear the steaks for about 3 minutes on each side for medium-rare, or longer to your desired doneness.
  • Remove the steaks from the skillet and let them rest.
  • In the same skillet, add shallots and cook until softened.
  • Pour in the beef broth and let it simmer for a few minutes.
  • Stir in the heavy cream and green peppercorns.
  • Cook the sauce until it thickens slightly.
  • Serve the filet mignon steaks with the shallot peppercorn cream sauce on top.

Notes

  • For a different flavor, you can substitute the green peppercorns with black or pink peppercorns.
  • Adjust the cooking time of the steaks based on your preferred doneness: 2-3 minutes per side for rare, 3-4 minutes for medium-rare, and so on.
