Description

A cool and creamy no-bake dessert with a chocolate cookie crust, peppermint cream filling, and swirls of melted chocolate. Topped with whipped cream and festive green sprinkles, this pie is the perfect treat for any celebration—especially St. Patrick’s Day.

  • 1½ cups chocolate cookie crumbs (such as Oreos, crushed)

For the Filling:

  • Green food coloring (a few drops)

  • 1 cup heavy whipping cream, whipped (or 1 tub whipped topping)

  • ¼ cup melted chocolate

For Garnish:

  • Whipped cream

  • Chocolate shavings or chips

  • Green sprinkles or edible glitter


Instructions

  1. Make the Crust:

    • In a bowl, combine cookie crumbs and melted butter.

    • Press mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish.

    • Chill in the refrigerator while preparing the filling.

  2. Make the Filling:

    • In a large bowl, beat the softened cream cheese until smooth.

    • Add powdered sugar, peppermint extract, and green food coloring; mix until well combined.

    • Gently fold in whipped cream or whipped topping until the mixture is light and fluffy.

    • Pour filling into chilled crust and smooth the top.

  3. Add the Swirl:

    • Drizzle melted chocolate over the filling in thin lines or zig-zags.

    • Use a toothpick or knife to gently swirl the chocolate into the top layer of the pie.

  4. Chill and Garnish:

    • Refrigerate pie for at least 4 hours, or until set.

    • Before serving, top with whipped cream, chocolate shavings, and green sprinkles.

Notes

  • For a stronger mint flavor, add an extra ¼ teaspoon peppermint extract.

  • You can substitute the chocolate drizzle with a mint chocolate ganache for extra richness.
