Shrimp and Pepper Stir-Fry

A quick and colorful stir-fry featuring succulent shrimp and vibrant bell peppers, tossed in a savory sauce and served over rice—perfect for a weeknight dinner.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 1 tsp cornstarch (optional for thickening)
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Sesame seeds and green onions for garnish

Instructions

  • In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, and cornstarch if using. Set aside.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes, until pink and just cooked through. Remove shrimp and set aside.
  • In the same skillet, add garlic and bell peppers. Stir-fry for 3-4 minutes, until the peppers are tender-crisp.
  • Return shrimp to the skillet and pour in the sauce. Stir to coat everything evenly and cook for an additional minute until heated through.
  • Serve over cooked rice and garnish with sesame seeds and green onions.

Notes

For added spice, consider including sliced jalapeños or red pepper flakes.
