Description

Instructions

  1. Prepare the shrimp: Boil the shrimp in salted water for 2-3 minutes until pink and opaque. Immediately transfer to an ice bath to stop cooking. Once cooled, chop into bite-sized pieces.
  2. Mix the citrus marinade: In a large bowl, combine fresh lime juice and lemon juice. This acidity continues to ‘cook’ the shrimp and provides bright, tangy flavor.
  3. Add aromatics and veggies: Stir in finely diced red onions, diced tomatoes, chopped cilantro, and minced jalapeño into the citrus marinade.
  4. Combine shrimp with the marinade: Add chopped shrimp to the bowl and toss gently to coat evenly. Season with salt and pepper, then drizzle olive oil over the top and mix gently for a silky finish.
