Description

This quick and flavorful Shrimp Noodles dish combines tender shrimp, crisp vegetables, and rice noodles tossed in a savory sesame soy sauce. It’s a light, healthy, and delicious meal ready in just 20 minutes!


Ingredients

  • 8 oz rice noodles
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  • Cook rice noodles according to package instructions. Drain and set aside.
  • In a large skillet, heat sesame oil over medium heat. Add shrimp and cook until pink, about 2-3 minutes.
  • Add bell pepper, snap peas, garlic, and ginger to the skillet. Cook for an additional 2-3 minutes.
  • Stir in soy sauce and cooked noodles. Cook for another 2 minutes.
  • Season with salt and pepper to taste. Top with green onions before serving.

Notes

For extra flavor, add a splash of lime juice or a drizzle of chili oil. You can substitute the shrimp with chicken or tofu for a different protein option.
