- 8 oz rice noodles
- 1 lb shrimp, peeled and deveined
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 red bell pepper, sliced
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Cook rice noodles according to package instructions. Drain and set aside.
- In a large skillet, heat sesame oil over medium heat. Add shrimp and cook until pink, about 2-3 minutes.
- Add bell pepper, snap peas, garlic, and ginger to the skillet. Cook for an additional 2-3 minutes.
- Stir in soy sauce and cooked noodles. Cook for another 2 minutes.
- Season with salt and pepper to taste. Top with green onions before serving.
Notes
For extra flavor, add a splash of lime juice or a drizzle of chili oil. You can substitute the shrimp with chicken or tofu for a different protein option.
