- 1 cup beef broth
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon cinnamon
Instructions
- Preheat Oven: Preheat your oven to 325°F (165°C).
- Season the Roast: Generously season the beef roast with salt and pepper on all sides.
- Prepare the Liquid: In a large Dutch oven, combine the beef broth, cranberry juice, balsamic vinegar, honey, minced garlic, thyme, and cinnamon. Stir to mix well.
- Add the Roast: Place the seasoned beef roast into the Dutch oven, ensuring it’s submerged in the liquid. Cover with a lid.
- Braise in Oven: Place the Dutch oven in the preheated oven. Cook for 3-4 hours, or until the beef is tender and easily pulls apart with a fork.
- Rest the Roast: Once done, carefully remove the beef from the Dutch oven and let it rest on a cutting board for about 15 minutes before slicing.
- Make the Glaze: Strain the cooking liquid through a fine mesh sieve into a saucepan. Simmer the strained liquid over medium heat until it thickens to your desired consistency, creating a glaze.
- Serve: Slice the beef roast and serve it drizzled with the cranberry balsamic glaze.
