Description

This Slow Cooker Cheesy Mozzarella Chicken is a simple, comforting dish where tender chicken breasts slow-cooked in flavorful marinara and chicken broth are topped with melted mozzarella and Parmesan cheese. Infused with Italian herbs, it’s perfect for a hands-off, delicious weeknight dinner that pairs well with pasta, rice, or veggies.

For the Chicken:

  • 4 boneless skinless chicken breasts

  • 2 teaspoons garlic powder

  • Salt and pepper, to taste

  • 1 cup chicken broth

  • 1 cup marinara sauce

  • 2 teaspoons Italian seasoning

For the Topping:

  • 1 cup shredded mozzarella cheese

  • ¼ cup freshly grated Parmesan cheese

  • 1 tablespoon fresh basil, chopped

Optional Add-ins:

  • Red pepper flakes (for heat)

  • Extra garlic cloves

  • Fresh oregano

  • Sun-dried tomatoes


Instructions

  • Prepare the chicken: Season chicken breasts with garlic powder, salt, and pepper.

  • Add to slow cooker: Place chicken breasts in the slow cooker. Pour chicken broth and marinara sauce over the chicken. Sprinkle Italian seasoning evenly. Add optional add-ins if using.

  • Cook: Cover and cook on low for 4–6 hours or on high for 2–3 hours, until chicken is tender and cooked through.

  • Add cheese topping: About 15 minutes before serving, sprinkle shredded mozzarella and Parmesan cheese over the chicken. Cover and continue cooking until cheese is melted and bubbly.

  • Garnish and serve: Sprinkle with fresh basil before serving.
