- 1.5 pounds boneless, skinless chicken thighs, cut into 1/2-inch pieces
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 3 carrots, chopped
- 1 yellow onion, chopped
- 5 cloves garlic, chopped
- 2 russet potatoes, peeled and diced
- 2 tablespoons coconut aminos
- 1 teaspoon salt
- 3/4 teaspoon oregano
- 1/2 teaspoon rosemary
- 1 bay leaf
- 2 1/2 cups chicken broth
- 1 cup almond milk (or milk of choice)
- 2 tablespoons cornstarch (or arrowroot)
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper, then brown them in the skillet for about 5-7 minutes, stirring occasionally. Once browned, transfer the chicken to the slow cooker.
- Add the chopped carrots, onion, garlic, and diced potatoes to the slow cooker with the chicken.
- Stir in the coconut aminos, salt, oregano, rosemary, bay leaf, chicken broth, and almond milk.
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken and vegetables are tender.
- In a small bowl, mix the cornstarch (or arrowroot) with a tablespoon of cold water to create a slurry. Stir this into the stew during the last 30 minutes of cooking to thicken the broth.
- Once the stew is finished cooking, discard the bay leaf. Taste and adjust seasoning with more salt or pepper if needed.
- Serve hot and enjoy!

- For a creamier stew, you can add an extra 1/2 cup of almond milk or use full-fat coconut milk.
- You can substitute the chicken thighs with chicken breasts for a leaner option, though thighs offer more flavor and tenderness in the slow cooker.
