This hearty and comforting Slow Cooker Chicken Stew is full of tender chicken, vegetables, and a flavorful broth. With aromatic herbs, coconut aminos, and a touch of almond milk, it’s a satisfying and healthy meal that practically cooks itself!


Ingredients

  • 1.5 pounds boneless, skinless chicken thighs, cut into 1/2-inch pieces
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 3 carrots, chopped
  • 1 yellow onion, chopped
  • 5 cloves garlic, chopped
  • 2 russet potatoes, peeled and diced
  • 2 tablespoons coconut aminos
  • 1 teaspoon salt
  • 3/4 teaspoon oregano
  • 1/2 teaspoon rosemary
  • 1 bay leaf
  • 2 1/2 cups chicken broth
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons cornstarch (or arrowroot)

Instructions

  • In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper, then brown them in the skillet for about 5-7 minutes, stirring occasionally. Once browned, transfer the chicken to the slow cooker.
  • Add the chopped carrots, onion, garlic, and diced potatoes to the slow cooker with the chicken.
  • Stir in the coconut aminos, salt, oregano, rosemary, bay leaf, chicken broth, and almond milk.
  • Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken and vegetables are tender.
  • In a small bowl, mix the cornstarch (or arrowroot) with a tablespoon of cold water to create a slurry. Stir this into the stew during the last 30 minutes of cooking to thicken the broth.
  • Once the stew is finished cooking, discard the bay leaf. Taste and adjust seasoning with more salt or pepper if needed.
  • Serve hot and enjoy!

Notes

  • For a creamier stew, you can add an extra 1/2 cup of almond milk or use full-fat coconut milk.
  • You can substitute the chicken thighs with chicken breasts for a leaner option, though thighs offer more flavor and tenderness in the slow cooker.
  • Feel free to add other vegetables like celery, peas, or green beans based on what you have on hand.
  • If you prefer a thicker stew, add more cornstarch slurry or let the stew cook uncovered for the last 30 minutes to reduce the liquid.
