Description

Tender, juicy beef simmered in savory beef broth, Worcestershire sauce, and aromatic herbs, then served on a hearty roll with melted cheese. These Slow Cooker French Dip Sandwiches are a delicious, satisfying meal perfect for lunch or dinner.

For the French Dip:

  • 23 pounds beef chuck roast or rump roast, trimmed of excess fat (or leaner options like sirloin or boneless bottom round)

  • 3 cups low sodium beef broth

  • ¼ cup Worcestershire sauce

  • 2 tablespoons extra virgin olive oil

  • 2 yellow onions, quartered and thinly sliced

  • 3 cloves garlic, minced

  • 1 bay leaf

  • Salt and pepper, to taste

For Serving:

  • 46 rolls (preferably sturdy enough to hold up when dipped, such as French baguette or hoagie rolls)

  • 812 slices cheese (provolone, Swiss, Havarti, or Monterey Jack)


Instructions

  • Prepare the Beef:
    Season the beef roast generously with salt and pepper on all sides. In a large skillet, heat olive oil over medium-high heat. Sear the beef roast for 3–4 minutes per side, until browned. Remove the roast and place it in the slow cooker.

  • Make the Broth:
    Add the beef broth, Worcestershire sauce, garlic, onions, and bay leaf to the slow cooker. Stir to combine, then cover.

  • Cook the Beef:
    Cook on low for 8–10 hours, or on high for 4–5 hours, until the beef is fork-tender.

  • Shred the Beef:
    Remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to combine with the juices.

  • Toast the Rolls (optional):
    If desired, lightly toast the rolls in the oven or on a skillet.

  • Assemble the Sandwiches:
    For each sandwich, place a generous portion of shredded beef on a roll. Top with 2–3 slices of cheese. Place the assembled sandwiches under the broiler for 2–3 minutes, or until the cheese is melted and bubbly.

  • Serve:
    Serve the sandwiches with a small bowl of the beef broth (au jus) for dipping.

Notes

  • If you prefer a leaner option, use a sirloin roast or bottom round, but keep in mind these may require shorter cooking times.

  • Serve with extra au jus for dipping, or add a side of fries or a salad for a complete meal.

  • You can make the au jus a bit spicier by adding a pinch of red pepper flakes or hot sauce.
