Ingredients
For the French Dip:

2–3 pounds beef chuck roast or rump roast, trimmed of excess fat (or leaner options like sirloin or boneless bottom round)

3 cups low sodium beef broth

¼ cup Worcestershire sauce

2 tablespoons extra virgin olive oil

2 yellow onions, quartered and thinly sliced

3 cloves garlic, minced

1 bay leaf

For Serving:

4–6 rolls (preferably sturdy enough to hold up when dipped, such as French baguette or hoagie rolls)

8–12 slices cheese (provolone, Swiss, Havarti, or Monterey Jack)
Instructions

Prepare the Beef:
Season the beef roast generously with salt and pepper on all sides. In a large skillet, heat olive oil over medium-high heat. Sear the beef roast for 3–4 minutes per side, until browned. Remove the roast and place it in the slow cooker. -
Make the Broth:
Add the beef broth, Worcestershire sauce, garlic, onions, and bay leaf to the slow cooker. Stir to combine, then cover. -
Cook the Beef:
Cook on low for 8–10 hours, or on high for 4–5 hours, until the beef is fork-tender. -
Shred the Beef:
Remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to combine with the juices. -
Toast the Rolls (optional):
If desired, lightly toast the rolls in the oven or on a skillet. -
Assemble the Sandwiches:
For each sandwich, place a generous portion of shredded beef on a roll. Top with 2–3 slices of cheese. Place the assembled sandwiches under the broiler for 2–3 minutes, or until the cheese is melted and bubbly. - Serve:
Serve the sandwiches with a small bowl of the beef broth (au jus) for dipping.
