Ingredients
For the Lemon Greek Yogurt Sauce:

1 cup plain Greek yogurt (whole, 2%, or lowfat)

1½ teaspoons kosher salt, divided
For the Greek Chicken:

2 pounds boneless, skinless chicken breasts or thighs

1 tablespoon olive oil (optional, for searing)

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon ground black pepper

Juice of 1 lemon

2–3 garlic cloves, minced

½ cup chicken broth or water
Instructions

Make the Yogurt Sauce:
In a small bowl, combine Greek yogurt, minced garlic, lemon zest, lemon juice, and ½ teaspoon kosher salt. Stir until smooth. Refrigerate until ready to serve. -
Prepare the Chicken:
Place chicken in the bottom of the slow cooker. Sprinkle with remaining salt, oregano, thyme, pepper, and minced garlic. Pour in lemon juice and chicken broth. -
Cook the Chicken:
Cover and cook on low for 4–5 hours or on high for 2½–3 hours, until the chicken is tender and cooked through. -
Shred or Slice:
Remove the chicken and shred or slice as desired. Optional: return to slow cooker to soak in juices before serving. - Serve:
Serve warm chicken with a generous dollop of the lemon Greek yogurt sauce. Garnish with chopped fresh parsley, if desired.
